RECIPE-NAME: "Thai fried rice" RECIPE-SOURCE: "Can not remember" RECIPE-INGREDIENTS: [ ["coconut milk" "1 cup"] ["rice" "1 cup"] ["lime juice" "1/4 cup"] ["soy sauce" "3 Tablespoons"] ["brown sugar" "4 teaspoons"] ["cornstarch" "4 teaspoons"] ["dark miso" "1 Tablespoon"] ["canola oil" "2 Tablespoons"] ["shallots" "4 chopped"] ["red pepper flakes" "1/2 teaspoons"] ["firm tofu" "12 ounces"] ["green beans" "2 cups"] ["ginger" "1 Tablespoon minced"] ["garlic" "3 cloves minced"] ["scallions" "3 large"] ["cilantro" "1/2 cup"] ["basil" "1/2 cup chopped"] ["roasted peanuts" "1/2 cup chopped"] ] RECIPE-PROCEDURE: { Cook rice in coconut milk and 2 cup of water Mix lime juice, soy sauce, brown sugar, cornstarch, miso. Heat a wok and add canola oil. Cook shallots and pepper flakes about 2 minutes. Crumble tofu, add to wok, cook until crisp. Add beans and cook 2 minutes. Add ginger and garlic and cook 1 minute. Add liquid mixture and rice. Cook until dry and well mixed. Add scallions, cilantro, and basil. Garnish with peanuts. } RECIPE-NOTES: { I works to saute with water instead of oil. We like the rice better with 1/2 cup coconut milk and 1 1/2 cups water. Tastes fine without red pepper flakes. }
